Long Clawson Blue Shropshire
Long Clawson dairy have been making blue cheese since 1911 and are one of England’s oldest farmer’s co-operative.
Still owned by the farmers, Long Clawson prides itself on not just Blue Stilton but the very famous Blue Shropshire as well. Blue Shropshire is made in the same way as Blue Stilton but with the addition of Annatto. Adding Annatto creates a slightly different flavour and a wonderful vibrant colour. Made from pasteurized milk and pressed only by its own weight, the cheese develops a creamy flavor that is not over powered by strong blue favors. The cheese is aged for 14 weeks and usually pierced after 5 weeks. It’s only when the piercing takes place that you start to see the blue mold developing.
It’s a wonderfully well rounded blue cheese and perfect for something different to put on a cheese board.

I visited Long Clawson Dairy, in Leicestershire in the heart of England.
In celebration of their Centenary, Long Clawson has created a World Record attempting 100lb Blue Stilton Cheese. The Cheese is made to the same exacting standards following the methods traditionally used for the 18lb (8kg) Blue Stilton.
I met with Martin Harris, Long Clawson’s Export Manager, as seen in the photograph with the Commemorative Plaque which was unveiled, by their Royal Highnesses, the Prince of Wales & The Duchess of Cornwall on 25th January, 2011.

We were fortunate enough to be situated right next to a lovely couple from Washington state on the Cheeseworks stand at the Winter Fancy Food Show in San Francisco. Stephen J. Hueffed and Amy Turnbull gave up their previous occupation to take on the immense challenge of running a dairy farm.
