Long Clawson dairy have been making blue cheese since 1911 and are one of England’s oldest farmer’s co-operative.
Still owned by the farmers, Long Clawson prides itself on not just Blue Stilton but the very famous Blue Shropshire as well. Blue Shropshire is made in the same way as Blue Stilton but with the addition of Annatto. Adding Annatto creates a slightly different flavour and a wonderful vibrant colour. Made from pasteurized milk and pressed only by its own weight, the cheese develops a creamy flavor that is not over powered by strong blue favors. The cheese is aged for 14 weeks and usually pierced after 5 weeks. It’s only when the piercing takes place that you start to see the blue mold developing.
It’s a wonderfully well rounded blue cheese and perfect for something different to put on a cheese board.
